About This

  • NATURALLY CULTIVATED - These sunchokes are grown naturally using only organic methods in West Virginia, USA.
  • EASY TO USE - Sunchokes are high in inulin and an excellent alternative to the high glycemic index potato. They are excellent served fresh in salad, boiled and blended into mashed potatoes or chopped and used in soups or stir fry. Their texture when served fresh resembles that of a water chestnut, and their flavor is nutty and slightly sweet.
  • EASY TO GROW - When planted in late fall, winter or early spring by burying 2-3" deep in rich, loose soil, the plants grow to 8 feet tall by the end of summer, and the roots are hardy to -20 F. The roots can be harvested fresh from late fall to late winter.
  • PERENNIAL & LONG LIVED - Jerusalem artichokes come back every spring and each tuber can spread to produce a plant that is up to 3 feet in diameter in just one season. They come back year after year even after heavy harvesting.
